FRANKENSTEIN CUPCAKES IN A JAR RECIPE INSTRUCTIONS
Begin by preheating the oven to 350 degrees. Make the cupcakes according to the package instructions.
Add 2 drops of green gel food coloring (I used neon green but any green works). Separate evenly into cupcake tins.
Bake for 15-18 mins, remove from oven and allow to cool.
While the cupcakes are cooling make the frosting.
Beat butter on medium speed in a stand mixer or with a handheld until fluffy.
Gradually beat in the powdered sugar.
Add the vanilla and milk and beat until incorporated, about 2 mins.
Tint buttercream icing purple (I used 2 drops of electric purple, violet can also be used). Beat for 5 mins on high to make it super silky.
Add buttercream to a piping bag (or Ziplock bag) fitted with a 1M or 2D piping tip.
To make the Frankenstein pops, melt the green candy melts and add in 1-2 tsp of coconut oil (you can also use vegetable oil).
Melt the candy melts in 30-second increments at a time in the microwave until melted, do not overheat it, as it will burn.
Mix it well, adding 1 tsp of oil at a time to make it smooth.
Once melted (should take no longer than 60-90 secs) dip the Rice Krispy treat face down into the chocolate.
Add candy eyeballs immediately.
Once all are completed set them to the side and repeat the melting process with black candy melts.
Add the melted black candy to a piping bag or Ziplock bag and snip a small hole in the tip.
Making small up and down movements while squeezing the black candy, create the hair.
Once the hair is created, give the face eyebrows, a mouth, and a little zigzag scar at the bottom right corner.
Allow the Frankenstein pops to set for 10 mins or until completely dry. Insert the popsicle sticks to the bottom then set them aside.
To assemble the Frankenstein cupcakes in a jar, remove the cupcakes from their liners and slice them in half crosswise.
Place one half in the jar upside down.
Squeeze a circle of frosting around the top, applying even pressure the entire time.
Add the other half of the cupcake on top and repeat with frosting.
Slice another cupcake in half and add a third layer to the jar, top with frosting and sprinkles.
Once all of the jars are filled, add the Frankenstein Rice Krispy pops to the center of the jars to complete the project.
In less than two hours, you’ll have a fun Frankenstein-themed cupcake that’s sure to become a new favorite!

Sprinkles can be added at each layer if you would like.
