Ingredients:
- 2 C. cooked diced chicken (I typically use leftover baked chicken OR rotisserie chicken)
- 1 C. steamed broccoli florets
- 4 oz cream cheese, softened to room temperature
- 1/4 C. mayonnaise, Here’s a great list of low-carb mayo options.
- 1/2 C. sour cream
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1/2 C. shredded mozzarella cheese
Directions:
Preheat the oven to 350 degrees.

Combine the chicken, broccoli florets, softened cream cheese, mayonnaise, sour cream, onion powder, garlic powder, and salt & pepper.

Pour the mixture into a baking dish and sprinkle the 1/2 cup of mozzarella cheese on top.

Bake for 25-30 minutes or until heated through.

I’ve made this probably five or six times now in the past few months, it has honestly become one of my FAVORITE dishes to both make and eat. I’ve never had any issues with the sauce being too runny and will actually add a bit more broth to make more of it because it’s so freaking delicious. I always eat about 3/4 of the dish myself and we literally never have leftovers. Thank you sharing such delicious recipe.

The flavour was great, but mine did not turn out anything like yours. The consistency was VERY watery so we added some corn starch to thicken it up some. Still it was more like a stew than a casserole. Not sure if it was error on my end, just thought I’d leave some feedback. Thank you for sharing!
